Last week, I (Lucy) was absolutely delighted to step away from the Truly Scrummy kitchen for a day and immerse myself in one of the UK’s most cherished culinary institutions: Bettys. I attended their fantastic one-day ‘Bettys Christmas Classics’ course, in the hope of bringing back some new skills and increasing the quality we bring to your festive celebrations this year.
The goal? To soak up the techniques, the precision, and the sheer dedication to tradition that Bettys is famous for, and bring that expertise right back here to ensure Truly Scrummy’s Christmas offering is the best it has ever been.
The Bettys Benchmark: Learning from the Masters
The course was an intensive, hands-on journey into creating three quintessential Christmas treats: a rich Christmas cake, a fruit-packed Christmas pudding, and their unique streusel-topped mince pies. More than just following a recipe, it was about understanding the why behind every step—the essential techniques that turn a good bake into a truly exceptional one.
Here are my top takeaways and how they will shape our Truly Scrummy Christmas menu:
1. The Art of the Rich Christmas Cake
A Christmas cake is more than just dried fruit and batter; it’s a legacy. What I learned at Bettys was a renewed appreciation for the importance of ingredients, preparation, and maturing.
- What I learned: We delved into the method for achieving truly rich flavour—a dark, moist, and deeply aromatic sponge that benefits from precise ingredient weighing and the careful folding of nuts and soaked fruits. Crucially, the class covered the techniques for preparing the cake for its long maturing process, ensuring it stays perfectly moist and ready to be “fed” for maximum depth of flavour.
2. The Perfectly Fruit-Packed Christmas Pudding
The Christmas Pudding is often a challenging bake, but the Bettys method ensures absolute perfection: a dense, dark, and wonderfully fruity pudding.
- What I learned: The focus here was on maximizing the fruit-to-ffee ratio and the essential role of steaming. We learned the precise balance of ingredients to achieve that sought-after texture—packed with fruit but still wonderfully yielding. The steaming process was a masterclass in patient cooking, which extracts every bit of flavour from the spices and spirits.
3. The Delight of Streusel-Topped Mince Pies
This was the fun, slightly unexpected twist! While traditional mince pies are wonderful, Bettys’ decision to crown them with a golden, buttery streusel topping elevates them into something truly special.
- What I learned: It wasn’t just about the streusel; it was about the perfect shortcrust base and the preparation of the mincemeat itself. The streusel adds a delightful, textural crunch that contrasts beautifully with the gooey, spiced filling. The key is in the ratio and the technique for rubbing in the butter to achieve that flaky finish.
